What is Tahini?

Tahini is made from ground sesame seeds. Sesame seeds contain more phytosterols than all other nuts and seeds. These are important for their cholesterol-lowering and cancer-blocking effects. There are many other nutrients in sesame seeds, but it is difficult for the body to absorb them due to their hard outer layer, or hull. Consuming sesame seeds in the paste form of tahini allows the body to absorb the nutrients they provide more efficiently.

What is Our Green Tahini?

Our Green Tahini is based on organic ground and roasted sesame seeds, and we add other organic, plant-based ingredients to make our ready-to-serve tahini green, cool and creamy. Green Tahini is a gluten-free, vegan, and nut-free spread, dip, salad dressing, condiment, and sauce.

People always ask, “what makes your Green Tahini so green?”

The base ingredient in our Green Tahini is the organic ground and roasted sesame seeds. Cilantro and parsley are the other main ingredients in most of our Green Tahini flavors, and the reason for its natural green color. We do have a parsley-only flavor called Parsley, which does not contain cilantro.

Cilantro is an herb that contains a good source of antioxidants, and helps cut down on sodium intake. Some studies suggest that increasing consumption of plant foods like cilantro may decrease the risk of obesity, overall mortality, diabetes, and heart disease while promoting healthy skin and hair, increased energy, and overall lower weight.

Parsley is low in calories and rich in important nutrients, such as vitamins A, K and C. In fact, just two tablespoons (8 grams) of parsley deliver more vitamin K than you need in one day. Vitamin C improves heart health, is vital to your immune system, and acts as a powerful antioxidant, protecting your cells from damage caused by unstable molecules. Parsley is also a good source of magnesium, potassium, folate, iron and calcium.

Are all of your tahini flavors green?

Funny you should ask that! Actually, we just came out with a new flavor, Beet Tahini, which is still based on the organic ground and roasted sesame seeds, but we use organic beets as our other main ingredient. This flavor does not contain cilantro nor parsley. Our Beet Tahini has a deep maroon color. Due to the beets, it is a bit sweeter than the Green Tahini flavors, but just as delicious! It also pairs well with the same types of foods as our Green Tahini flavors.

Who are we?

We are Liz and Boaz, husband and wife co-owners of Green Tahini, LLC, based in Louisville, Colorado. We have two daughters, Evan and Noa, who are our brightest lights and who love Green Tahini as much as we do. :) The highlight of our week is that very special time that always comes at the end of preparing a batch, our favorite moment – the tasting. And at every tasting, Boaz says the same thing: “It’s just so good.”

He was mostly used to eating it as an add-on ingredient with hummus. When he was diagnosed with colitis back in 2006 and could not consume many (especially fibrous) foods, he went to a nutritionist, who

advised him to eat tahini with everything he ate.

She explained that being easily digestible and very high in protein and good nutrients, tahini would promote fast healing and would strengthen his digestive system. As the raw tahini paste is pretty thick in consistency and not that tasty by itself, Boaz started experimenting by adding different natural ingredients to it to make it a delicious, ready-to-serve tahini.

After many years of experimentation, he came up with the winning recipe, which is based on ground and roasted sesame seeds, and just the right proportions of fresh, green herbs and other natural, plant-based ingredients.

Not only did the Green Tahini nurse Boaz back to health, it was so delicious that our entire family all became addicted to it.

Our two daughters enjoy it the most with chips and carrots, or as a spread on their cheese or turkey sandwiches. We use it as a salad dressing, put it on every sandwich we eat, marinade our fish or meat dishes with it, use it as a creamy sauce on rice or eggs…or just take it straight up! One of our favorite breakfast meals is to just have it on a rice cracker or toast with some really good coffee.

It’s a great, healthy replacement for mayonnaise, mustard or ketchup on hamburgers and hot dogs. It is especially great on kebabs!

After many years of making it for ourselves, friends, and family members, we received a lot of encouragement to share it with the wider Louisville/Boulder community. In August 2019, we started selling it only at the Louisville Farmer’s Market, and now you can buy our tahini at various retail locations in Boulder and Denver. We are also full-time City Park Farmers Market (CPFM) vendors, so come check us out at CPFM every Saturday during the market season (May 13-Oct 28, 2023). We are so thrilled to continue to make and share our tahini with all of you for many years to come!
